Sold as: Approx 10kg to 15kg for small, 15kg to 20kg for medium, and 20kg to 25kg for large
Best cooked as: Roasted in a preheated oven, starting at a higher temperature to develop colour before finishing at a gentler heat for an even, succulent result.
Best enjoyed with: Carved at the table and served with roasted potatoes, pan juices or gravy, and a selection of seasonal vegetables or salads.
