A premium steak cut from Phils, prized for its rich flavour and juicy bite, ideal for occasions where a classic, high-end steakhouse result is the goal.
Sold as: Approx 350g to 500g for a medium and 500g to 800g for a large, select preferred size and number of fillets needed.
Best cooked as: Seared in a very hot pan or over intense braai coals, then rested properly to allow the juices to redistribute, best enjoyed from medium-rare to medium.
Best enjoyed with: Sliced against the grain and served with hand-cut chips, a crisp seasonal salad and a classic accompaniment such as peppercorn sauce, béarnaise or chimichurri.
