Sold as: Available from 2kg to 3kg (trimmed), for a medium, 3kg to 4kg for large.
Best cooked as: Slow-braised or cooked low-and-slow in the oven, potjie or slow-cooker until the meat relaxes into fork-tender pieces.
Best enjoyed with: Served with creamy mashed potatoes, soft polenta or herbed rice, alongside roasted root vegetables and a glossy red-wine or stock-based jus.
